Next, fold the remaining egg whites into the batter with a stiff spatula: push the spatula to the bowl’s bottom, then flip the batter over to incorporate the whites. Leave small lumps of egg white intact (overmixing kills the rise).

Bake the souffléScrape the batter into the prepared dish (fill halfway). Place on the bottom oven rack:
